When it comes to moules, Guy (pronounced “Gee” with a hard “g”) likes to keep things simple by steaming the mussels in white wine and serving them in a sauce of the cooking liquid with butter and shallots. This is Guy’s version of a classic French preparation called moules marinieres, and it’s an easy and flavorful way to serve mussels.
Place the mussels in a large pot. Add the wine, onion, garlic, herbes de Provence, parsley, olive oil and salt and pepper. Bring to a boil, cover and cook for about 5 minutes or until the mussels open. Discard any that don’t open. Remove the mussels from the pan, and then serve in bowls with a drizzle of the juices over the top. moules
